  • 1 cup fresh Joyfully Grown™ cherries, pitted and halved
  • 4 oz pancetta, diced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp balsamic vinegar
  • 2 tbsp brown sugar
  • 1 tbsp honey
  • 1 tbsp fresh thyme leaves
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • 1/4 cup water
  • Dollop of stone ground mustard

Instructions:

  1. Cook the Pancetta:
    • In a medium skillet, cook the diced pancetta over medium heat until crispy.
    • Remove the pancetta and set it aside, leaving the rendered fat in the skillet.
  2. Sauté the Onion and Garlic:
    • Add the chopped onion to the skillet with the pancetta fat.
    • Sauté until softened and translucent, about 5 minutes.
