Ingredients:
• 1 package frozen puff pastry, thawed
• 5 shallots, thinly sliced
• 1/2 stick (4 tbsp) butter
• 1 lb bacon, diced
• 6 oz sharp white cheddar cheese, shredded
• 2 Gala apples, thinly sliced
• 2 tbsp fresh thyme leaves
• Salt and black pepper, to taste
• Red pepper flakes, to taste
• 1 egg, beaten (for egg wash)
• Fresh pomegranate seeds (for garnish)
• Optional: hot honey or sour cream, for serving
Instructions:
Prep and Pre-Bake the Puff Pastry:
Preheat your oven to 400°F (200°C).
Unfold the thawed puff pastry on a lined baking sheet. Score a 1-inch border around the edge, being
careful not to cut all the way through. Brush the border with egg wash.
Prick the center of the pastry with a fork to prevent over-puffing.
Bake for 10 minutes, until light golden brown and slightly puffed. Remove from the oven and use a
spoon to gently press down the center to flatten it.
Cook the Bacon:
In a large skillet over medium heat, cook the diced bacon until crispy. Remove bacon and set aside on a
paper towel-lined plate, reserving 2 tablespoons of bacon fat in the pan.
Caramelize the Shallots:
To the skillet with bacon fat, add the butter and sliced shallots. Cook on low heat, stirring occasionally,
until the shallots are golden and caramelized, about 15-20 minutes. Season with a pinch of salt and black
pepper.
Assemble the Tart:
Sprinkle half of the shredded cheddar cheese onto the deflated center of the puff pastry.
Arrange the apple slices over the cheese, followed by dollops of the caramelized shallots.
Sprinkle the crispy bacon and thyme over the tart. Add the remaining cheese and a pinch of red pepper
flakes, if desired.
