Ingredients:
- 1 cup cooked lentils
- 1 bunch asparagus, trimmed and roasted
- 200g halloumi cheese, sliced and grilled
- 1 Joyfully Grown™ Honeycrisp apple, sliced
- 1 green tomato, sliced
- 2 cups arugula
- Quick pickled red onions (store-bought or homemade)
- Greek yogurt or yogurt-based dill sauce
- Olive oil
- Salt and pepper to taste
Instructions:
- Cook the lentils according to package instructions and set aside.
- Preheat the oven to 400°F (200°C). Arrange the trimmed asparagus on a baking sheet, drizzle with olive oil, sprinkle with salt and pepper, and roast for 10-15 minutes, or until tender.
- Heat a grill pan or skillet over medium-high heat. Grill the halloumi slices for 1-2 minutes on each side, until golden brown grill marks form.
