Homemade granola bars are not only healthier than store-bought, but tastier too. We love to use Granny Smith apples in this recipe, so you get a burst of apple flavor in every bite. Using a pre-mixed Muesli cereal, eliminates the need for purchasing a bunch of extra ingredients. With customizable flavors and additions, the options are endless! This is a simple recipe, that is great for breakfast, lunches and snacking in-between meals.

Ingredients: 

  • 1 large Granny Smith apple
  • 1 tsp. cinnamon powder
  • 2 ½ c. Muesli Cereal
  • ½ c. honey (warmed)
  • ¼ c. coconut oil (melted)
  • ¼ c. brown sugar (packed)
  • ½ tsp. vanilla
  • ¼ tsp. salt
  • 1/3 c. caramel pieces (or white chocolate chips)

Directions: 

  1. Preheat oven to 225°F. Then slice apples and place the rounds evenly on a parchment lined cookie sheet and sprinkle with cinnamon.
  2. Dehydrate the apples in the oven for 1 hour flipping halfway through. When the time has elapsed, let them cool and then rough chop into bits, and proceed with the recipe.

  3. Preheat oven to 325°F line the bottom of a quarter sheet pan, or 9-inch pan with parchment paper and set aside. 
  4. In a medium sized mixing bowl, add the chopped apple pieces, muesli, honey, coconut oil, brown sugar, vanilla, salt, and caramel pieces. Mix until well combined.
  5. Pour the mix onto the prepared sheet or pan and place in oven for 30 minutes or until the edges are slightly browned.
  6. Remove and let cool completely in pan. When cool, slide out onto a cutting board, and cut into evenly sized bars. 
  7. Store the bars in an airtight container for a week, or the freezer for 3 months.
