Red pear is fabulous in sweet and savory applications and ideal for flatbreads and pizzas! This recipe is great for brunch, lunch and/or dinner.  It comes together quick with simple ingredients, so it is ideal for a busy weekday or weeknight meal. Pear and prosciutto are a classic flavor paring (pun intended) and the arugula adds a bit of peppery bite.  Finish these off with a chunk of burrata for an elevated meal plan that takes less than 30 minutes from start to finish.

This recipe serves 4

Ingredients:

  • 2 store-bought flatbread or lavash 
  • ¼ c. olive oil
  • 8 oz. Italian blended cheeses
  • 1-4 oz. package of prosciutto 
  • 1 red pear, quartered, cored and sliced thin
  • Small bag of fresh arugula 
  • 3-2 oz. Burrata quartered 

Directions:

  1. Preheat your oven to 425°F. Place your flatbreads onto a large cookie sheet lined with parchment paper. Using a pastry brush, evenly coat the olive oil atop the flatbread pieces.
  2. Sprinkle the cheese over the flatbread using as much or as little as you prefer. Tear the prosciutto into small chunks and distribute evenly. Take the pear slices and add them in the empty spces around the prosciutto.
  3. Bake for 10 minutes or until the cheese is completely melted and the bread is toasty. Remove from the oven, allow to cool slightly, transfer to a cutting or serving board, cover with a liberal amount of arugula, slice into triangles and top each piece with a serving of burrata cheese.
