Ingredients:
- 1 cup fresh Joyfully Grown™ cherries, pitted and halved
- 4 oz pancetta, diced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp balsamic vinegar
- 2 tbsp brown sugar
- 1 tbsp honey
- 1 tbsp fresh thyme leaves
- 1/2 tsp black pepper
- 1/4 tsp salt
- 1/4 cup water
- Dollop of stone ground mustard
Instructions:
- Cook the Pancetta:
- In a medium skillet, cook the diced pancetta over medium heat until crispy.
- Remove the pancetta and set it aside, leaving the rendered fat in the skillet.
- Sauté the Onion and Garlic:
- Add the chopped onion to the skillet with the pancetta fat.
