Ingredients
Salad:
- 3 English cucumbers, chopped
- 1 head of broccoli, chopped
- 1 avocado, cubed
- 1 ½ Granny Smith apples, chopped
- Handful of fresh mint, chopped
- Handful of fresh chives, chopped
- ½ cup pumpkin seeds
Dressing:
- ½ cup mayonnaise
- ½ cup plain Greek yogurt
- 2 tablespoons whole-grain Dijon mustard
- Zest and juice of 2 limes
- Pinch of salt
Instructions
- Add all salad ingredients to a large bowl.
- Sprinkle with pumpkin seeds.
- In a separate bowl, whisk together all dressing ingredients.
4. Toss the salad with half the dressing until evenly coated.
5. Serve immediately with the remaining dressing on the side.
