There’s nothing like the refreshing crunch of apples on a hot summer day, and this vibrant salad brings that crispness front and center. Juicy Honeycrisp and tart Granny Smith apples are the stars of this dish, offering the perfect balance of sweetness and zing. Combined with watermelon, blueberries, lime, mint, and a salty sprinkle of feta and Tajín, this salad is both cooling and complex. The apples not only hold their texture beautifully but also soak up just enough of the lime and mint to make each bite pop. It’s a quick, no-fuss recipe that tastes like sunshine in a bowl. 

 

Ingredients

• 4 cups cubed watermelon
• 1 cup blueberries
• 1 Honeycrisp apple, diced
• 1 Granny Smith apple, diced
• Handful of fresh mint, chopped
• Juice of 2 small limes
• Zest of 1 lime
• 4 oz feta, crumbled
• Drizzle of olive oil
• Sprinkle of salt
• Generous sprinkle of Tajín seasoning
• Optional: chopped pistachios, for topping

Instructions

  1.  Add the watermelon, blueberries, diced apples, mint, and crumbled feta to a large serving bowl.
  2. Drizzle with lime juice and olive oil, then add the lime zest.
  3. Sprinkle with salt and Tajín and gently toss everything to combine.
  4. Top with chopped pistachios if using and serve immediately.
