Ingredients:

  • 1 lb. frozen Joyfully Grown sweet red cherries
  • ½ cup plus 4 tbsp granulated sugar
  • 1 tbsp lemon juice
  • 1 cup all-purpose flour
  • ½ cup cornmeal
  • 1 tsp baking powder
  • 1 tsp salt
  • 2 sticks unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract

Instructions:

  1. Prepare the Cherries:
    • In a large saucepan, combine the frozen sweet red cherries, ½ cup granulated sugar, and lemon juice.
    • Cook over medium heat, stirring occasionally, until the cherries release their juices, and the mixture begins to simmer (about 5-7 minutes).
  2. Make the Dumpling Batter:
    • In a medium bowl, whisk together the flour, cornmeal, baking powder, and salt.
    • In a separate large bowl, beat the softened butter and remaining 4 tablespoons of sugar until light and fluffy.
    • Add the eggs one at a time, beating well after each addition.
    • Stir in the vanilla extract.
