We are doubling up on summertime flavors with sweet red and Rainier cherry frozen yogurt
bites! This super simple 5-ingredient frozen dessert is perfect for a hot sunny day, after camp
snack, or just to keep on hand in the freezer for a tasty treat anytime! Peanut butter and Greek
yogurt pack in the extra protein we all need at this time of year to keep up endless activities
and extra-long days. Naturally gluten free! Swap out the Greek yogurt for cashew or coconut yogurt to make this vegan.

Ingredients:
 1 cup of oats (I used whole rolled oats that are gluten free)
 ¼ c. peanut butter (nut allergy? opt for sunflower seed butter or something similar!)
 ¼ maple syrup
 1 cup of full fat Greek yogurt
 12 sweet red cherries with stems attached.
 12 Rainier cherries with stems attached.

Directions:
1. Add the oats, peanut butter and maple syrup to a small bowl and mix until well
combined.
2. Line a mini muffin tin with cupcake liners.
3. Add a tablespoon of the oat mixture to the bottom of each muffin cup and press down
to make a “crust”.

 

4. Spoon in the yogurt or place into a piping bag or condiment bottle to disperse evenly
over the top of the crust, leaving little room.
5. Pit each cherry on the side, to keep the appearance that the cherry is “whole”, leave
stem attached for aesthetic purposes and to also make them easy to pick up and pop in
your mouth!
6. Place a cherry into each muffin cup pressing down only slightly.

7. Freeze until cherry feels firm in place.
8. When ready to serve, allow to thaw for a few minutes and peel off the cupcake liner.
9. Serve and enjoy! MAKES 24
