Apple, pear, and cucumber, oh my! This sweet and savory flavor packed fresh salad will liven up any dish as the perfect accompaniment to salmon, pork or just served on its own. Running low on time? This recipe comes together in a flash with an easy spicy dressing that you can “make and shake” in a mason jar. By using a variety of fresh apples and pears, you not only add more flavor but texture too!

Ingredients:

  • 1 Granny Smith apple, cored and sliced thin
  • 1 Pink Lady apple, cored and sliced thin
  • 1 Bosc Pear, cored and sliced thin 
  • ½ English cucumber, sliced thin
  • ¼. cup apple cider
  • 1 tbsp. fresh dill
  • 1 tbsp. fresh tarragon
  • 1 tbsp. olive oil
  • 1 tbsp. brown sugar
  • 1 tbsp. Dijon mustard
  • ½ tsp. salt
  • ½ tsp. fresh cracked pepper

Directions:

  1. Add apple cider, dill, tarragon, olive oil, brown sugar, Dijon mustard, salt, and pepper to a mason jar. Place a lid on top and shake to incorporate. Set aside while you prepare the fruits.

     

  2. Core, and thin slice your fruits any way that you would like and add to a medium sized mixing bowl.
  3. Pour the dressing on top of the sliced fruits and toss to combine.

     

  4. Serve alongside pork, salmon or on its own. 
  5. Garnish with extra dill.
