Ingredients:
Citrus Pulled Pork
3 lb boneless pork roast
Salt and pepper to taste
1 tsp red pepper flakes
1 tsp garlic powder
1/2 cup chicken broth
2/3 cup balsamic vinegar
1/2 cup orange juice
2 tbsp Worcestershire sauce
2 tbsp hot honey
Cherry Compote
3 cups cherries, pitted
Splash of orange juice
1/2 cup powdered sugar
1/2 cup water
Protein Waffles
2 cups rolled oats
6 eggs
2 cups cottage cheese
1/2 tsp cinnamon
Pinch of salt
1 tsp vanilla extract
Mascarpone (for topping)
Hot honey (for topping)
Directions:
Pulled Pork
1. Season the Pork: Rub the pork roast with salt, pepper, and red pepper flakes.
2. Sear the Pork: Set Instant Pot to “Sauté,” add oil, and brown the pork on all sides.
Remove pork.
3. Deglaze: Add a bit of chicken broth to the pot, scraping up any browned bits.
4. Combine Ingredients: Add remaining chicken broth, balsamic vinegar, Worcestershire
sauce, hot honey, and orange juice. Stir well.
5. Pressure Cook: Return pork to the pot. Close lid, set to "Sealing," and pressure cook on
high for 60 minutes.
6. Natural Release: Let pressure release naturally for 10-15 minutes, then manually release
any remaining pressure.
7. Shred Pork: Remove pork, shred with forks, and set in the oven (170°F) on a baking
sheet to keep warm while you complete the next steps.
Cherry Compote
1. Combine Ingredients: In a medium saucepan, combine the cherries, splash of orange
juice, powdered sugar, and water.
2. Cook: Bring the mixture to a boil over medium heat, stirring occasionally.
3. Simmer: Reduce the heat and let it simmer for 10-15 minutes, or until the cherries are
soft and the mixture has thickened slightly. The cornstarch in the powdered sugar will
help thicken the compote as it cooks.
4. Cool: Remove from heat and let the compote cool. It will continue to thicken as it cools.
Protein Waffles
1. Preheat Waffle Iron: Plug in your waffle iron and preheat it according to the
manufacturer’s instructions.
2. Blend Ingredients: In a blender, combine the oats, cottage cheese, eggs, cinnamon, and
vanilla extract. Blend until the mixture is smooth and well combined.
3. Grease Waffle Iron: Lightly grease the waffle iron with cooking spray or brush with a
small amount of oil to prevent sticking.
4. Pour Batter: Pour an appropriate amount of batter onto the preheated waffle iron,
spreading it out slightly if needed.
5. Cook Waffles: Close the waffle iron and cook according to the manufacturer's
instructions, usually for 3-5 minutes, or until the waffles are golden brown and cooked
through.
6. Remove Waffles: Carefully remove the waffles from the iron using a spatula or tongs.
Build the Waffles
Start with a freshly made waffle. Top the waffle with warm citrus pulled pork, then spoon cherry
compote over the pulled pork. Add a dollop of mascarpone cheese on top. Serve immediately
and optionally drizzle with hot honey.
