Looking to elevate your lunch or find a new way to enjoy leftover turkey? Try this delicious grilled sandwich with crisp Granny Smith apple, melty brie cheese, and of course, turkey. Grilled low and slow on a thick crusty bread, this delectable sandwich hits all the marks! Granny Smith apples add the perfect amount of fresh, tangy crunch which paired with the rich brie cheese, is the combo that you won’t forget!

Ingredients (makes 2 sandwiches)

  • 1 Granny Smith Apple, cored and cut into ¼ inch slices.
  • 10oz Brie Cheese cut into slabs
  • 8oz Turkey lunch meat or shredded Turkey breast divided
  • 4 Slices of thick sourdough bread
  • ¼ c. butter softened
  • Cracked fresh pepper to taste

Directions

  1. Cut, core, and slice the Granny Smith apple to ¼ inch thickness
  2. Cut the brie cheese into 12 evenly sized slabs
  3. Divide the turkey for two sandwiches
  4. Pull out two slices of bread and begin layering. Start with the brie cheese. The cheese will melt, adhering to the bread and create a sturdy sandwich that will not fall apart when you dive in. On top of the brie, add the turkey, then the sliced apples, slightly overlapping each other. On top of the apples, add the remaining brie slabs. Grind some fresh black pepper over the top of the cheese, continue, topping with the remaining bread slices and liberally butter the tops.
  5. Heat a grill pan until butter sizzles, place the sandwiches non-buttered sized down and turn the heat down to medium-low.  When the underside looks dark golden brown and toasty, flip the sandwich over and allow the other size to do the same.
  6. Remove from the pan, slice, and serve hot and melty!
