Apple Pie Egg Rolls. What a concept. Serve this unconventional delight at your next gathering, a sporting event, for an after-school surprise or even brunch! Granny Smith apples are the ideal candidate for this job.  They are a tart apple which makes this satisfying treat not overly sweet.  You can make it even more indulgent with a bowl of warmed caramel off to the side. All the flavors of the classically loved apple pie wrapped up tight in a crispy, crunchy, buttery envelope!

Ingredients:

  • 2 Granny Smith Apples, cored and diced small
  • 1/3 cup of dark brown sugar 
  • 1 ½ tsp. ground cinnamon
  • 1 ½ tsp. cornstarch
  • 1 package of egg roll wrappers
  • 8 oz of cream cheese softened to room temperature
  • Spray ghee or clarified butter 
  • Cinnamon & sugar to taste
  • ½ cup of caramel sauce warmed

Instructions:

  1. Preheat oven to 425°F. Line a baking sheet with parchment paper and set aside. 
  2. Fine dice the apples and place into a medium sized mixing bowl along with the brown sugar, cinnamon, and cornstarch.  Stir to combine and set aside. 
  3. Take one egg roll wrap at a time and place onto a clean surface. Wet the outer edges, spoon on two tsp. of cream cheese and then top with two tablespoons of the apple mixture.

  4. First fold up the bottom corner, then each side, to make an open envelope. Roll from the bottom upwards until fully wrapped and seal the flap down with more water if needed.
  5. Place the rolls onto the prepared baking sheet and spray with ghee or brush clarified butter over the tops of each roll liberally.
  6. Bake for 20 minutes, flipping each roll every 5 minutes so that they evenly brown on all sides. 
  7. Meanwhile, make the cinnamon and sugar mixture
  8. After they are done, immediately heavily sprinkle cinnamon and sugar all over the rolls until covered. 
  9. Serve warm with a side of caramel sauce. Reheat in a 350°F oven or air fryer making sure that they do not get too browned!
