We have all heard of cherries and cheesecake, and cherry cheesecake, but what about cherry cheesecake upside-down pastries? This is our version of the viral pastry food trend, featuring delicious, sweet red cherries as the star of the show. We simplify this recipe by using store-bought puff pastry dough that is ready to bake and whipped cream cheese. The tanginess of the cream cheese pairs perfectly with the cherries and is enveloped in buttery flakey dough. Doesn’t get better than that!
Ingredients:
- 1 sheet of ready-to-bake puff pastry dough (thawed)
- 6 tbsp. of honey
- 1 cup of pitted and halved sweet red cherries
- 1-8oz container of whipped cream cheese
- 2 tbsp. sparkling sugar
- 1 egg for egg wash
Directions:
- Preheat oven to 400F
- Pit and halve cherries. Set aside.
- Unfold, and cut puff pastry in thirds long ways following the folds, then cut those strips in half. You will end up with 6 rectangles.
- Line a sheet tray with parchment paper.
- Drizzle honey in 6 circles spaced evenly apart.
- On top of the honey, place the halved cherries in groups of 7 arranged to look like a flower.
- Using a piping bag, add about two tablespoons of the whipped cream cheese to the top of the cherries. If you don’t have a piping bag, a spoon works just as well.
- Drape a rectangle of puff pastry over each pile of cherries, brush with egg wash, sprinkle with sparkling sugar.
- Bake in oven for 12-15 minutes or until puff pastry is golden brown.
- Flip over with a spatula and enjoy!
