Bread pudding is a tried-and-true classic dessert. In this easy to do recipe, we are using brioche bread and adding fresh sweet red cherries to elevate the old fashion method. Involve the kids and make something new that your family is sure to love. Serve it with an ice cream of choice on a hot day or enjoy as is. This can be whipped up in less than an hour and uses mostly pantry staples.
Ingredients:
1 loaf of brioche bread, cubed
2 cups of milk
½ stick of salted butter
½ cup of granulated sugar
Splash of vanilla extract
Pinch of salt
2 cups of fresh sweet red cherries, pitted
3 eggs beaten
Powdered sugar for dusting
Directions:
- Preheat oven to 350°F.
- In a small saucepan over low heat, warm milk, butter, vanilla, sugar and salt until butter melts. Set aside to cool.
- Meanwhile, while the mixture cools, grease a 6-cup casserole dish. Cube brioche bread and place in the prepared dish. Set aside.

- Pit two cups of cherries and scatter them amongst the cubed bread pieces in the casserole dish. You may want to nestle them down into the crevasses so that you get layers of fresh fruit.
- In a small bowl, whisk the eggs and then add them to the cooled milk and butter mixture, whisking again to incorporate evenly.

- Pour the mixture over the cubed bread pieces and cherries. If any bread pieces are popping up, simply push them down into the custard.
- Bake for 30-35 minutes, until custard is set, and the edges of the bread are a deep golden brown. Dust with powdered sugar.
- Serve warm with a scoop of ice cream (In this recipe we use a chocolate cherry ice cream)
