Breakfast is the most important meal of the day, but sometimes we can easily get stuck in a breakfast idea rut. When you are tired of overnight oats, give this overnight chia and fresh fruit pudding parfait a try! This is the perfect healthy breakfast option that takes minutes to assemble / meal prep. You can use any milk and yogurt of choice making this a simple vegan, gluten-free, keto, paleo or conventional brunch or breakfast. Chia seeds are full of protein, omega 3’s, antioxidants, and fiber.
Ingredients: (makes 4 small or 2 large servings)
- 4 tbsp. chia seeds
- 1 cup milk of choice (I used coconut milk in the above photo)
- 1 cup of yogurt of choice (I used mango lassi drinking yogurt)
- 1 tsp. honey, maple syrup, agave nectar or sweetener of choice
- Dash of pure vanilla extract (optional)
- ½ cup granola
- 1 Joyfully Grown™ Fuji apple (diced)
- 1 Joyfully Grown™ Red Pear (sliced)
Directions:
- In a 2-cup capacity container, stir together the chia seeds, milk of choice, sweetener and vanilla extract and stir to combine. Allow to “set” overnight.
- Add the chia pudding evenly to four small or two large cups.
- Add a layer of yogurt.
- Sprinkle with granola.
- Top with diced apples and sliced pears.
Notes: The chia pudding will last in the refrigerator for 5 days, making this a great recipe for food prepping.
