Breakfast is the most important meal of the day, but sometimes we can easily get stuck in a breakfast idea rut.  When you are tired of overnight oats, give this overnight chia and fresh fruit pudding parfait a try! This is the perfect healthy breakfast option that takes minutes to assemble / meal prep. You can use any milk and yogurt of choice making this a simple vegan, gluten-free, keto, paleo or conventional brunch or breakfast. Chia seeds are full of protein, omega 3’s, antioxidants, and fiber.

Ingredients: (makes 4 small or 2 large servings)

  • 4 tbsp. chia seeds
  • 1 cup milk of choice (I used coconut milk in the above photo)
  • 1 cup of yogurt of choice (I used mango lassi drinking yogurt)
  • 1 tsp. honey, maple syrup, agave nectar or sweetener of choice
  • Dash of pure vanilla extract (optional)
  • ½ cup granola
  • 1 Joyfully Grown™ Fuji apple (diced)
  • 1 Joyfully Grown™ Red Pear (sliced)

Directions:

  1. In a 2-cup capacity container, stir together the chia seeds, milk of choice, sweetener and vanilla extract and stir to combine. Allow to “set” overnight.
  2. Add the chia pudding evenly to four small or two large cups.
  3. Add a layer of yogurt.
  4. Sprinkle with granola.
  5. Top with diced apples and sliced pears.

Notes: The chia pudding will last in the refrigerator for 5 days, making this a great recipe for food prepping.
